4 tblsp Sweet butter 12 oz Semisweet chocolate chips 1/4 c Dark or amber rum 2 tsp Instant coffee powder 3/4 c Packed brown sugar 3 Eggs 1/4 c Flour 1 1/2 c Coarsely chopped walnuts; (divided) Whipped cream
Preheat oven to 350x F. Grease a 9" glass pie plate. In a 2-quart glass bowl, combine sweet butter and semisweet chocolate chips. Heat in a microwave oven on high 1 1/14 to 1 3/4 minutes, until mixture is melted and smooth when stirred. Stir in rum, instant coffee powder, packed brown sugar, eggs and flour. Mix until smooth and well blended. Stir in 1 c. of coarsely chopped walnuts. Turn batter into prepared pie plate. Sprinkle another 1/2 c. of chopped walnuts on top. Bake for 25-30 minutes or until puffed. Pie should still be moist inside. Do not over bake. Let pie cool to room temperature before serving, topped with whipped cream. Makes 8 servings.
