BLACKBERRY COBBLER
1 qt. blackberries
1 c. sugar
1 c. milk
1 tsp. baking powder
1 stick butter
1 tsp. flour
1 tsp. vanilla flavoring

Sweeten the blackberries to taste and add one stick of butter and bring to a boil. Put berry mixture in a deep pan. Then mix all other ingredients together and pour over berries and bake at 375 degrees for about 1 hour or until done.

Note: You can use any kind of fruit instead of blackberries, if you don't have fresh fruit use large cans of canned fruit.


BLACKBERRY COBBLER

1 c. flour
2 tsp. baking powder
1 c. sugar
3/4 c. milk
1/2 tsp. salt
2 1/2 c. blackberries

Combine flour, baking powder, 1/2 cup sugar, milk and salt in a bowl. Pour into greased 9x16x2 inch baking dish. Heat blackberries and 1/2 cup sugar in saucepan until it boils. Pour over batter. Bake at 400 degrees until golden brown
FRESH BLACKBERRY COBBLER

2 tablespoons cornstarch
1/4 cup cold water
1 1/2 cups sugar
1 tablespoon lemon juice
4 cups blackberries, picked over, rinsed & drained
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons butter, cold, cut in small pieces
1/4 cup boiling water

In a large bowl, stir together the cornstarch and 1/4 cup cold water until cornstarch is completely dissolved. Add 1 cup sugar, lemon juice, and blackberries; combine gently. Transfer to a cast iron skillet, about 8-inch.

In a bowl, combine the flour, remaining sugar, baking powder, and salt. Blend in the butter until the mixture resembles coarse meal. Add 1/4 cup boiling water and stir the mixture just until it a soft dough is formed.

Bring the blackberry mixture to a boil, stirring. Drop spoonfuls of the dough carefully onto the boiling mixture, and bake the cobbler on a baking sheet (line with foil to avoid a mess) in the middle of a preheated 400° oven for 20 to 25 minutes or until the topping is golden. Serve warm with vanilla ice cream or whipped cream.


BLACKBERRY COBBLER

1 egg
1 c. sugar
3 tbsp. butter, melted
1/3 c. milk
1/2 c. sifted all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
4 c. firm ripe blackberries
1/4 tsp. ground nutmeg
1/4 tsp. ground cinnamon

Beat together egg, 1/2 cup sugar, butter and milk. Sift together flour, baking powder and salt. Beat into egg mixture. Combine blackberries, remaining ingredients. Put in oiled baking dish (12 x 8 x 2 inches). Top fruit with batter. Bake in preheated oven (375 degrees) for 30 minutes or until golden brown
