Crust: Crust 8 (2 ½” squares) graham crackers Place 2/3 crumbs in a 9x13” pan
Filling: 1 1/3 cup boiling water 1 small lime (or lemon) diet Jell-o 1 package unflavored Knox gelatin ¼ cup lemon juice 2 packages Equal 12 oz. evaporated milk (chilled over night)
Topping: 1 cup Cool Whip
Dissolve Jell-o and gelatin in boiling water, add lemon juice and Equal. Chill until nearly set. With chilled beaters in a chilled bowl, beat milk until stiff; beat in Jell-o. Pour mixture over cracker crumbs. Chill until completely cool. Spread 1 cup Cool Whip evenly over mixture and sprinkle with reserved crumbs. Cut into 4 pieces (large servings).
