Orange Meringue Pie

9" baked pie shell
1 c. sugar
3 tbsp. cornstarch
1 c. orange juice
3 egg yolks, slightly beaten
3 tbsp. butter
1 tbsp. orange peel, grated
1 tbsp. lemon juice
1/2 c. water
Meringue

Heat oven to 400 degrees. Stir together sugar and cornstarch in medium saucepan. Blend egg yolks, orange juice and water; gradually stir into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Remove from heat; stir in butter, lemon juice and orange peel. Immediately pour into pie shell. Heap meringue over filling, carefully sealing, to edge of crust. Bake about 10 minutes or until delicate brown. Cool away from draft.
