Rich & Gooey Walnut Pie

3 eggs, lightly beaten
1 cup sugar
2 tablespoons all-purpose flour
1 cup dark corn syrup*
2 tablespoons butter, melted
1 teaspoon vanilla
1 9-inch unbaked pastry pie shell
1 1/2 cups large pieces (Diamond)
Walnuts, any brand

Preheat oven to 400ºF or 205ºC. In a large bowl combine eggs, sugar, flour, corn syrup, butter, and vanilla; blend well. Pour mixture into unbaked pie shell; arrange walnuts on top.

Bake in lower third of oven for 15 minutes. Reduce ove temperature to 350ºF or 177ºC; bake for an additional 35 to 45 minutes or until center appears set. Cool completely before cutting into wedges to serve.

*If you don't have dark corn syrup. Take 1/4 cup molasses or maple syrup and mix with 3/4 cup light corn syrup. I used molasses, gave it a great flavor.
