Sicilian Pizza

1 tbsp. yeast (granular yeast eg. Fleishmanns or Viva brand)
1/4 c. warm water
Pinch of sugar
4 c. bread flour
1 1/4 c. warm water
2 tsp. salt
1/4 c. olive oil
Sprinkle 1 tablespoon granular yeast into 1/4 cup warm (110 degrees) water. Add pinch of sugar. Let rest 2 minutes, then stir to dissolve yeast.
Combine with 4 cups bread flour, an additional 1 1/4 cups warm water, 2 teaspoons salt, and 1/4 cup olive oil. Mix well (approximately 5 minutes in food processor) and knead for 10 minutes, adding more flour if necessary.
Cover and let rise until double, about 1 hour. Punch down and roll out onto floured board. Spread onto lightly oiled baking pan (11x14). Cover and let rise about 45 minutes.
Preheat oven to 475-500 degrees. Lightly cover dough with sauce and bake for 5-10 minutes. Remove tray from oven; add remainder of sauce and desired toppings. Continue baking 10-15 minutes until crust is golden.
