Sicilian Pizza Dough

1 1/2 pkg. dry yeast
2 tsp. salt
5 c. flour
1 1/2 c. warm water
3 tbsp. oil

Soften yeast in water. Add oil, salt, and 4 1/2 cups flour. Stir until moistened, and knead until smooth (about 10 minutes). Put in greased bowl. Cover and let rise until doubled (about 2 hours). Punch down dough. Grease two 10 x 15 pans. Divide dough and stretch and press into pans. Let rise again for 30 minutes. Top with pizza sauce and your favorite pizza toppings. Bake at 400 degrees 25 to 30 minutes.
Tip: If you want to make the dough up before time, let the dough rise the first time, press into pans and freeze. Take it out the day you want to use them and let rise all day.
